Eleven food and entertainment options will include three signature restaurants featuring well-known, highly-acclaimed chefs. The goal of the resort’s culinary team is to provide an unparallel level of simple sophistication in dining experiences. A two-story steakhouse will overlook the picturesque pool and outdoor area. An Italian bistro will be created overlooking the beachfront and a modern Chinese restaurant will offer dim sum and other specialties. Additional food and beverage options include a three-meal restaurant in the lobby, sushi bar, two-story oceanfront pool grill and restaurant near the beach boardwalk, two satellite pool bars, lobby bar, quick-serve eatery and in-room dining.
Two chic, energetic entertainment venues will sizzle with high energy including an indoor/outdoor ultra lounge and the resort’s 26,000 square foot marquee nightclub located off the main lobby.
Gotham Steak: Executive Chef and Owner of New York’s mainstay restaurant Gotham Bar and Grill, Alfred Portale will bring his Michelin-star-rated cuisine to Fontainebleau Miami Beach. A crowning achievement, Chef Portale was named “Most Outstanding Chef in the Nation” by the James Beard Foundation in 2006, an honor bestowed upon the working Chef in America whose career has set national industry standards and who has served as an inspiration to other food professionals. About his food, the chef says, “I work to offer dishes that are intensely flavored and accessible. Each plate should have a clarity that gives the diner satisfaction. Plate design is also important.” Chef Portale’s vision for Miami Beach is described as applying completely new and progressive thinking towards preparing and presenting “clean” and “refined” food. The restaurant will expand upon the modern American steak house featuring raw seafood towers, an expanded menu of prime and exotic meats and a wine selection of 500+ wines from among the world’s most sought after to the easily accessible.
The Jeffery Beers International-designed, two level, 16,000-square-foot restaurant will offer indoor and al fresco seating for approximately 270 guests for dinner and cocktails at the bar. Focal points of the room will include a brilliant chandelier of strung, hand-blown glass, an open, exposition kitchen and a two-story, glass enclosed wine cellar accommodating up to 10,000 bottles. Gotham Steak will be an institution both within Miami and the international communities, a favorite destination with the travel set and socialites alike.
Scarpetta: Honored by Food & Wine magazine as one of 2004’s “Best New Chefs,” Scott Conant will create a regional Italian menu offering recipes in his unique style of cooking. Crisp, clean flavors prepared in layers will reflect the quality and nature of the fresh ingredients, previously experienced in his two New York City restaurants, L’Impero and Alto.
Warm and friendly service will complement Chef Conant’s distinctive cooking style and his ability to “finesse the most sublime flavors out of the simplest ingredients.” The dining concept combines the honesty and simplicity of Italy’s cucina rustica with the ambitious refined notes of alta cucina. The food will be inspired by the seasons, using farm-fresh products – to be served during lunch and dinner. Late afternoon and late night cocktails will be served in the lounge. Designed by David Collins, the ocean and poolside restaurant will seat 360 guests, including intimate gatherings on five outdoor, residential-style dining patios. Setting a new benchmark for the Italian dining experience, Conant’s restaurant will be the place to be and be seen.
Hakkasan: Alan Yau, the restaurateur who is acclaimed with re-inventing the Japanese food industry in the United Kingdom by improving traditional recipes with modern techniques with his Wagamama restaurants, is also the man behind the leading London restaurant and Michelin Star recipient, Hakkasan (the only Chinese restaurant in Britain to hold this rating). Mr. Yau will bring his award-winning Cantonese cuisine to Miami Beach in sleek, sophisticated style. Two stories up, Hakkasan will offer guests stunning views of the beach from 225 seats indoors and on the al fresco patio. A vast menu of new world wines and sake will complement savory dinners and a unique setting by French interior designer Christian Liagre.
Liv: The night club will provide an eclectic mix of trend setting entertainment with a highly-stylized décor and beverage offering.
Blade: The Ultra Lounge will feature a genre of DJ driven music in an upscale atmosphere with well prepared cocktails. The incorporation of a sushi bar will provide late night revelers with sustenance.
La Cote: This eclectic restaurant fronting Miami Beach will be the main venue for enjoying the pool as well as the beach. An atmosphere inspired by the Cote de Azure and St. Tropez, 350 seats will be spaciously arranged around several full service bars on two levels. The Beach Club’s bars will serve a full range of trendy cocktails, spirits, sangria and frozen beverages. The menu will provide a great selection of tapas-style snacks attractively presented and freshly prepared with an emphasis on quality. Simply prepared southern French cuisine with an outstanding selection of appetizers oysters, Fruits de la Mer, salads, crudités, as well as char grilled seafood and meats will be complemented by refreshing chilled desserts. The Beach Club will be open for breakfast, lunch and dinner with menus reflective of the seasons.
Fresh: This quick service venue located at the entrance to the pool will provide a good selection of American comfort snacks to be eaten in the restaurant or taken to the pool. The menu will offer the finest in hot and cold coffee beverages, juices and beers as well as freshly prepared Gelato and Gelato desserts. For more substantial appetites there will be salads, a full range of hot and cold sandwiches, burgers, hot dogs and pizzas by the slice. Creative, distinctive and sensible packaging will make it possible for guests to grab something quick to take back to their room. The restaurant will be open for breakfast, lunch and dinner.
Vida: The café will be inspired by the resort’s glamorous history as well as its modern American design. When you enter the restaurant you will first be presented with a sparkling pastry station with chocolate pastries, signature soufflés and ice cream desserts. You will then become aware of the exhibition kitchen framed in flame on both sides with rotisserie and hearth ovens. The menu will offer a Pan-American cuisine influenced by Florida, California, Mexico, Peru, Argentina, Brazil and the Caribbean. A good selection of appetizers, salads, soups, tortas, churassacos, rotisserie and grilled items will be complemented with pastas and pizzas. This energetic yet composed atmosphere will appeal to many types of guests from the individual looking for a casual quick meal to groups of guests looking for social dining. The restaurant will be open for breakfast, lunch and dinner seven days a week.
Solo: The coffee and pastry shop will be located adjacent to the lobby and across from the Lobby Lounge. This venue will provide a selection of exceptional quality coffees, cappuccinos, espresso, teas and juices. It will serve breakfast pastries in the morning and evolve into a more substantial offering of pastries, cakes, desserts and skillfully prepared signature cakes through the day. The venue will also provide a selection of sandwiches and salads. All menu items will be for carry-out and will be cleanly packaged in uniquely designed packaging. This venue will be open seven days a week.
Glow: Two full service bars will be centrally located in the pool areas offering a complete selection of beer, cocktail favorites and frozen beverages. A further complement of tailored menus for food service will include appetizer platters, crudités, tapas, chilled seafood platters and a petit selection of the Beach Club’s menu.
Bleau Bar: The lobby lounge will provide late afternoon entertainment as a subtle background. The center bar will provide the largest selection of glamorous cocktails from the rich history of the resort’s past as well as eclectic modern spins on the originals. A comprehensive selection of wines by the glass will further complement the sophisticated yet energetic atmosphere generated in this space. There will be a variety of creative bar snacks presented to guests enjoying their beverages. Monday through Friday afternoons will showcase a chocolate indulgence.
